I haven't watched that many commentary tracks all the way through, but the Fight Club and Hellboy commentaries were quite good. Edward Norton was the highlight of the former, while the whole ensemble was good in the Hellboy commentary. It just sounds like they are having a ball, without any trace of "really big star" baggage.
Since you have Bad Hair Day in your favorite albums list, I will recommend the DVD commentary for Weird Al's film "UHF." It is hilarious and features "surprise" guest appearances.
