I think Little Mermaid and Toy Story 2 would rank at the top of the list.
My personal favorite would have to be Alice In Wonderland. The whole possiblity of talking to flowers and growing and shrinking was so amazing to me as a kid. (I also liked Sword in the Stone for the same reason).
Hercules rather than Beauty and the Beast? Oh, Martin...
Oh well, I salute you for leaving The Lion King off the list. I also agree with you on prefering Toy Story 2 to the first one.
