I'm not a huge anime otaku, but I do enjoy the occasional series/movie. This isn't all that I've seen, but just what I can think of off the top of my head.

Cool list. Nice to see some other fans of anime. I've never heard of "Chobits" and I've thought about checking out "Serial Experiments: Lain" for quite awhile.
Chobits is the ultimate " magical girlfriend" anime. It's about a guy studying for college entrance exams who happens to find a persocom (personal computer designed to look and act like a girl). The animation is great, and it's insanely cute and funny.
Serial Experiments is the opposite. It's dark and makes little sense (though you can pick out a couple running themes), but the craziness makes it worthwhile.
I'm not an anime person--I only liked a handful of films and hadn't watched any part of any series--but I was blown away by seeing End of Evangelion. I just started watching Neon Genesis Evangelion a couple weeks ago on the Cartoon Network and I'm loving it.
Neon Genesis is _the_ anime, in my opinion. A lot of people hate the last couple episodes, as it jumps off into introspective character analyses and away from the 'plot', but I love them. It's interesting to see the characters built up through the series and then torn apart.
I'd advise against most of the other stuff Cartoon Network plays. It's usually garbage.
